We love Johnny cakes on St. Martin and have them at every occasion; for breakfast with butter and jam, as a snack, as side dish or bread, and even as a base for sandwiches stuffed with chicken, tuna, ham and cheese or more!

There are as many variations of Johnny cakes as there are people home-cooking them, and each family uses different ingredients and cooking methods. Some recipes use cornmeal, while others use flour or a combination of both. Some recipes are sweet, while others are savory.
